OLIVES
A good part of our groves are dedicated to end up on your tables! You can really enjoy the benefits of our hard work…and sit back enjoying the tasty morsels that have been steeped in a rich marinade, waiting for your first bite.
It’s an exciting time in the olive grove at “bud-set” time – because this is when the fruit begins to form on the trees. At this stage the fruit is only made up of acid and sugar – so as the fruit grows and ripens the acid and sugar start turning into the liquid gold you enjoy.
There are some amazing color contrasts, from pale green, vibrant grass green, to a pale pink with a hint of mauve then to that wonderful eggplant aubergine color, then to the end color black. But don’t be fooled- a green olive straight off the tree is the most awful taste you’ll ever have in your palate..so be patient and wait for us to cure them.
The riper the olives are, the less the bitterness, and the higher the oil content, So when you try some of our plump black olives, you can enjoy the fully ripened flavour.
